1 cup Vegan Burger Mix (Vege Caliente Spicy Mexican Flavor)
2 cans vegetarian chili beans
2 cans diced fire roasted tomatoes
1 small can of green chilies or jalapenos (optional)
small yellow or purple onion, diced
2 cloves garlic, diced
1 red bell pepper, diced (hint: roasting it over a flame gives it more flavor)
1 small bag frozen corn
a few sprigs of fresh basil, chopped (and for garnish)
1 Tbs dried oregano
2 Tbs nutritional yeast (more if if you like it cheesier)
1 Tbs black pepper
1 tsp chili power (more to taste)
1 tsp smoked paprika (optional, more to taste)
1 tsp Himalayan sea salt
1 cup of diced mushrooms
1 Tbs barbecue sauce
Start off my preparing the Vegan Burger, sautéing until you have small bite size pieces. Then put the beans, tomatoes and all other ingredients in a large pot (a Crock Pot works great and you can keep it warm all day as everyone has a bowl). Add the Vegan Burger pieces last. Mix everything together and warm it up. Enjoy!
